Mini Meatloaf

Meatloaf - double beet loaf...that's what some people think about this delicious and hearty little meat dish (hopefully you remember that line from A Christmas Story). But seriously, these little things are not the dried out or greasy versions you may have lurking in your past. Each one has it's own little crust and can be customized to each person's liking. Make your own pizza party? How about a "make your own meatloaf" party?! Monday night madness right there!

Ingredients

  • 1.34 lbs ground beef (85% lean - I get the organic pack from Costco...my favorite store on earth)
  • 2 eggs
  • 1 cup seasoned bread crumbs (see which you like better, traditional or panko)
  • 1 teaspoon kosher salt
  • 1/2 cup salsa (I used a pumpkin salsa from a nearby farm, but you could use a mango salsa or something else you might already have, depending on the flavor you're wanting. Sometimes I just use BBQ, marinara sauce, or sun-dried tomatoes and artichokes.)
  • 3/4 cup shredded white cheddar

Pre-heat oven to 400 degrees. Mix all ingredients and form into 8 small, oval mounds placing them on a silicon mat or baking sheet. Bake for 25-30 minutes until they give to the touch (too firm and they won't be as moist).
