Curried Panko Pork Chop Sandwich
I know I lost a bunch of people at "curry", but this is a spice blend I've been making for a while. Even my anti-curry family really likes this.
You'll see I made this into a sandwich, but also served another night solo and both were wonderful. Truth be told, the sandwich was my favorite though.
Ingredients:
- 8 thin cut pork chops, boneless
- 1 cup panko
- 1 1/2 teaspoon spice blend
- 2 eggs, scrambled
Spice blend:
- 1 teaspoon curry
- 3/4 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon sea salt
Mix the panko and spice blend in a pie dish or something of the sort - set aside. Pour scrambled egg into another pie dish. Preparing the pork, dredge each side of the chop in egg, then do the same in the panko.
*In the case of the sandwich, I pan-fried the pork in a mix of olive oil and butter for 3 minutes each side (till browned and slightly firm). In the case of the solo chops, I pre-heated the oven on convection to 400 degrees for about 15 minutes. Both were great - just depends on your preference, but I do like the health benefits of the baked version.
Top with a little bar-b-que sauce or tonkatsu sauce like I did. I grew up on that stuff and it is so delicious!
