Corned Beef Breakfast
Wasting food is not something I do without cringing. So, I often repurpose the leftovers to make something different so I can still enjoy the food made the day (or two) before.
St. Patrick's Day dinner was a typical corned beef with some various sides. But this morning, my oldest son and I are sick and just lounging. For him I just made scrambled eggs, but for me, I diced up that corned beef and tossed it, along with a handful of fresh spinach, into a dry cast iron skillet to heat through and wilt the spinach. Served it alongside scrambled eggs topped with Irish whiskey cheddar. There was no need to even season anything because there is so much salt and seasoning in the beef.
