Chicken Salad Sandwich
I wouldn't live anywhere they don't have a Costco - unless it's an amazing tropical island (sorry Costco). One of my favorite things to get every time is their rotisserie chicken. It is both delicious and economical at only $5. Even though I love good food, I don't want to spend a fortune.
Tonight I needed to make something quick while I man-sit my friend who just had surgery. So I started pulling things out of the fridge that sounded good for chicken salad. The only thing I would change is the cheese I used (pictured is swiss, but it did nothing for me).
- 2 cups cooked chicken breast, chopped (basically 2 chicken breasts)
- 1/2 cup celery, chopped semi-fine
- 1 tablespoon cilantro
- 1 tablespoon cranberries, heaping (sub raisins if you like)
- 1 tablespoon pepitas, heaping (or another seed)
- 3-4 tablespoons mayo
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 teaspoon cumin
- sharp cheddar cheese
- sourdough bread
Mix all ingredients in bowl, except bread and cheese (not sure what that would produce). Toast bread with a slice of cheddar in oven so cheese melts. Scoop 1/2 cup chicken mixture onto bread and enjoy.
