Carmelized Lemon & Garlic Ricotta Dip
About 6 months ago on a Sunday afternoon, everyone wanted a snack. I had half a container of ricotta that was leftover from a noodle-less lasagna I had made that week, some lemons, and garlic. You already know this is going to be finger-licking good! (And yes, one of my children licked the bowl.)
- 1 cup ricotta
- 4 thin slices of lemon
- 1/2 garlic clove, sliced
- olive oil
- sea salt
Sauté the lemon and garlic in a drizzle of olive oil till caramelized a bit releasing the flavors. Toss the lemon, garlic, ricotta, drizzle of olive oil, and nice pinch of sea salt into your blender. Blend till everything is incorporated and smooth. Serve with veggies and tortilla chips. We happen to always have mini bell peppers and this was great with those.
